  4. 4 cloves of garlic, minced
  5. 1-inch piece of ginger, grated
  6. 2 tomatoes, chopped
  7. 2 green chilies, slit
  8. 1 teaspoon cumin seeds
  9. 1 teaspoon fennel seeds
  10. 1 teaspoon coriander powder
  11. 1 teaspoon turmeric powder
  12. 1 teaspoon garam masala
  13. Add 1/2 teaspoon of red chili powder, adjusting the quantity according to your preferred level of spiciness.

  1. In a large, heavy-bottomed pot or pressure cooker, heat ghee or oil.
  2. Add cumin seeds and fennel seeds. Allow them to splutter for a few seconds. 
  3. Then, add sliced onions and sauté them until they turn golden brown.
  4. Add minced garlic and grated ginger. Sauté for a minute until fragrant.
  5. Now add mutton and cook until they turned browned in color.
  6. Add chopped tomatoes and green chilies. Keep cooking to make tomatoes soft.
  7. Now add powder spices that are coriander, turmeric , red chili , and salt. Mix them well to ensure that the mutton is thoroughly coated with the these.
  8. Now drain the water and add soaked rice in the pot. Stir gently to combine the rice with the mutton and spices.
  9. Add enough water to cover the rice and mutton. The ratio of rice to water is usually 1:2 (1 cup rice to 2 cups water).
  10. If using a pressure cooker, cover it with the lid and cook for about 2 whistles or until the mutton and rice are cooked tenderly. If using a pot, cover it with a tight-fitting lid and cook on low heat until the rice and mutton are cooked through and the water is absorbed.
  11. Once cooked, remove from heat and let it rest for a few minutes.
  12. Fluff the rice gently with a fork and garnish with fresh coriander leaves.
